Hubby T has been on a low card diet for a few months now. Some days are good, and some days are not so good. While going through my FB pages, I noted that a diabetic friend of mine made a delicious looking fried rice using cauliflower as a substitute for rice. So, I took a flower of cauliflower, chopped it up and fried it with egg, shrimp and frozen vegetables.
From now onwards, whenever he needs a feeling of the taste of carbs, we’ll use cauliflower instead.
